Vegetarian Eggs Benedict with Spinach


Ingredients:

3 eggs fried in butter (poach them if you wish)
3 slices Yves Veggie Cuisine Canadian Bacon
1 cup of raw spinach leaves (washed and dried)
1/2 order homemade hollandaise sauce

Instructions:

Spread the spinach on the plate and arrange the bacon.
Put the plate in the microwave until the bacon is hot and the spinach is slightly wilted. You can cook either ingredient more or less in any manner you choose.
Top each piece of bacon with a cooked egg.
Pour one half of the sauce over everything.

Hollandaise Sauce (recipe is from Joy of Cooking)
Makes enough sauce for 2 people (actually you could easily serve 3 or 4 people)

Put 3 egg yolks, 2 tablespoons lemon juice, 1/4 tsp salt, and a dash of
cayenne pepper in a blender. Add 1/2 cup of melted butter (unsalted).
Blend for about 30 seconds. You're supposed to add the butter with the
blender running and stop just as you've finished (since pouring the butter
will take 30 seconds of course) but it works fine to do it all at once.

For 3 eggs and 1/2 the hollandaise sauce (not counting butter used to fry eggs):
